
This is hardly a recipe, but I wanted to share my favorite topping on cilantro or basil pesto pizzas: balsamic-glazed onions.
Ingredients:
1/2 yellow onion, sliced
2+ tablespoons balsamic vinegar*
few glugs olive oil
few shakes pepper
1 tablespoon honey**
2 small, chopped garlic cloves
*If on the SCD-diet, be sure to choose safe balsamic vinegar (aged 18 years).
**If following strict vegan diet, substitute with maple syrup.
Methods:
1. Heat olive oil in a sauce pan on medium-high. When hot, add sliced onions into the pan and saute for several minutes, until translucent (about five minutes). Add garlic.
2. Add 2+ tablespoons of balsamic vinegar to the pan (it will steam) and honey. Cook until most of the liquid evaporates and you’re left with a thick syrup (about 5 additional minutes). Top your pizza!
